Product type:

 

Ham: this is the product from the rear legs of the pig, once salted when raw and cured naturally.

 

Paleta(Shoulder) this is the product from the front legs of the pig, once salted when raw and cured naturally.

 

Feed and Management::

 

Bellota: during the fattening stage, the pig has been fed only with acorns, grass and other natural resources from the pasture.

 

Cebo de campo: the pig has been fed with feed, although also taking advantage of the pasture or green resources, both intensive and extensive farming exploitations outdoors (part of the area could be covered).

 

Cebo: animals feed with feed made mainly of cereals and leguminous plants, whose management is carried out in intensive farming exploitation systems.

 

Breed factor:

 

100% ibérico: products from 100% Iberian breed genetically pure animals, whose parents are also 100% Iberian breed genetically pure and are registered in the relevant stud book.

 

Ibérico: products from animals with at least 50% of their genetic percentage corresponding to Iberian pork breed.
