THE MONTANERA PERIOD
From October to February, the ripen acorns fall from the trees and fill the floors of the oak grove land with true delicacies for the pigs. It is the montanera season, the period when the pig will graze freely on the dehesa, eating natural herbs, insects and acorns, in harmony with the environment.
This is the fattening period, when the animal puts on 60 kg by eating up to 7 kg of acorns a day. In these last months of life, the pig will live like a king… no rush, no stress, eating in a balanced way and doing physical exercise to allow the fat to infiltrate the muscular packages.
